Plant Description:
Stevia is a perennial shrub that grows up to 45 cm tall and its leaves are 2-3 cm long.
It belongs to family Asteraceae, which is native to the northern regions of South America.
It is estimated that as many as 200 species of Stevia are indigenous to South America,
amongst which Stevia rebaudiana has the highest intensity of sweetness.

Active Component and Structure:
The component of Stevia that gives it its sweetness is a mixture of various glycosides.
The dry leaves of cultivated Stevia plants contain this component at a volume of 10% to
15%. The principal components are Stevioside and Rebaudioside A.
